SMTP address versus EX address in Outlook Address Book/Contacts

When I add an email address to a contact in Outlook Contacts, and that email
address is on the same Exchange server, the email address that actually
shows up in the Outlook Address Book/Contacts is an EX email address, not a
SMTP email address.  The EX email address also is synchronized with my Palm.
A typical EX email address looks like:

    /o=Customer Knowledge Inc/ou=ECUSTOMERS/cn=Recipients/cn=jallen

1.  What the h.... is an EX email address?

2.  How can I force the SMTP email address to be the email address in
Outlook Address Book/Contacts?

3.  How can I force the SMTP email address to be synchronized with my Palm?
(This is the problem I'm really trying to solve.)
